Slimming Tropical Chicken Salad

Did you know there are actually foods that will help shape certain areas of our body, similar to the machines and exercises in the gym – a diet effective at shaping your body, just like a weight? Today we discuss legs, a problem area for many. 

The next time you focus on your legs in the gym, use the kitchen to round out the workout, making a meal high in anti-inflammatory foods rich in potassium and low in salt. 

Foods especially high in potassium are papaya, cucumber, tomato and mango, all ingredients included in this delicious tropical chicken salad. Combined with avocado, cashews, and a fresh orange vinaigrette, this is a great way to motivate you at the gym to take a few more minutes on the leg machines.

Tropical Chicken Salad

  • 2 chicken breasts, grilled or broiled and sliced 
  • 4 cups organic mixed baby greens
  • 1 cup fresh papaya, cubed 
  • 1 cup fresh cucumber, seeded and cubed
  • ½ cup cherry tomatoes, halved
  • ½ cup fresh mango, cubed
  • ½ cup avocado, cubed
  • ¼ cup cashews 

Directions

Combine all ingredients and toss with vinaigrette. Serve immediately.

Orange-Cilantro vinaigrette

  • 3 Tbs olive or canola oil, or a combination 
  • 2 Tbs fresh orange juice 
  • Zest of ½ orange 
  • 1 Tbs minced shallot 
  • 1 tsp Dijon mustard 
  • Salt and pepper to taste 

Directions

Combine all ingredients in a small glass jar with a tight-fitting lid. Shake to combine. Can hold for up to 4 days in the fridge. 

*Serves 2, but can be easily doubled
