Ingredients
- 2 cups cooked orzo
- 1 cup pitted variety olives
- 1 cucumber, seeds removed
- 1/5 red onion slivered
- 1 cup cherry tomatoes
- 1/2 cup crumbly feta
- 1 can rinsed garbanzo beans
- A swig of olive oil
- Sea salt, to taste
- Oregano, to taste
- 1 cloves garlic, minced
- 1 zest of one lemon plus juice
- 2 Tbs fresh chopped parsley
Directions
Mix all the ingredients in a bowl and serve chilled.
