Apple Bacon Protein Pancakes

Stack of Apple Bacon Protein pancakes

Pancakes AND bacon? It's a match made in heaven. No need to say more! 

Ingredients

Pancakes

  • 1 cup brown rice flour
  • 5 egg whites
  • 1 egg
  • 1 teaspoon Flavorgod Bacon Lovers
  • 1 scoop PRO7EIN Synthesis Caramel Pretzel
  • 1/2 cup organic unsweetened apple sauce
  • 1/4 cup almond milk
  • 1 tablespoon honey
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 tablespoon coconut oil
  • 2 strips cooked uncured apple smoked bacon, chopped

Topping

  • 2 cups red apples, sliced
  • 1 tablespoon coconut oil
  • 2 tablespoons honey
  • 1/4 cup organic maple syrup

Directions

  1. Whisk all pancake ingredients together until no lumps remain.
  2. Heat a skillet or griddle to medium heat and spray with coconut oil.
  3. Drop the batter by 1/3 cups full onto the skillet. Cook for 2 minutes per side, until golden brown, then flip.
  4. Add coconut oil to a heated skillet. Add apples and remaining topping ingredients. Simmer on medium for 10-15 minutes or until apples are tender.
  5. Serve hot, top with caramelized apples and syrup, bacon and enjoy!
